SUPER fast snack that can look pretty fancy

Energy Bites
makes approximately 2 dozen depending on size
  • 1/2 C peanut butter
  • 1/3 C honey
  • 1 C old fashioned rolled oats
  • 1 C shredded unsweetened coconut
  • 1-2 tsp vanilla
  • salt to taste
  • few handfuls of  chocolate chips
Mix well. Form  into balls.  I didn’t measure anything just added what looked right and more if it needed to be stickier or drier.  That is what made it so quick for m …and only one bowl=)
